Ingredients

  • 1 cup reduced Bisquick
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 2 cups Nabisco 100% bran
  • 1 1/4 cups 2% milk
  • 1/3 cup firmly packed brown sugar
  • 1 egg or egg substitute
  • 1/2 cup applesauce

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Mix reduced Bisquick, baking powder, baking soda, and cinnamon in a large bowl.
  3. In another bowl, combine cereal, milk, and brown sugar.
  4. Let the cereal mixture stand for 5 minutes.
  5. Stir in the egg and applesauce into the cereal mixture.
  6. Add the wet mixture to the flour mixture.
  7. Stir just until moistened; batter will be lumpy.
  8. Spoon batter into a muffin pan sprayed with no-stick cooking spray.
  9. Bake for 18 to 20 minutes or until golden brown.
  10. Serve warm.
