Ingredients

  • 1 cup sugar
  • 4 eggs, separated
  • 3 tablespoons pineapple juice
  • 1 scant teaspoon salt
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • 2 cups walnut halves
  • 1 pound whole pitted dates
  • 1/2 pound candied cherries
  • 1 cup whole Brazil nuts

Instructions

  1. Beat sugar and egg yolks together until well combined.
  2. Mix part of the flour with the dates, cherries, and Brazil nuts to coat them evenly.
  3. Combine the dry ingredients (flour, baking powder, salt, vanilla) with the wet ingredients (egg yolks, pineapple juice) and mix thoroughly.
  4. Beat the egg whites until stiff peaks form.
  5. Gently fold the beaten egg whites into the batter until just combined.
  6. Line loaf pans with waxed paper and pour the batter into them.
  7. Bake at 325°F (160°C) in a slow oven.
  8. Bake large loaves for about 1 hour or smaller loaves for about 30 minutes, checking frequently to prevent over-browning and drying out.
