Brazil Nut Drops are crunchy, nutty cookies with chunks of Brazil nuts and coconut, perfect for nut lovers and suitable for festive occasions or casual snacking.

Ingredients

  • 1 c. soft shortening
  • 1 c. sugar
  • 2 eggs
  • 1/2 Tbsp. vanilla
  • 2 c. (1/2 lb.) cut-up Brazil nuts
  • 2 1/4 c. flour
  • 1/2 tsp. soda
  • 1/4 tsp. salt
  • 1/2 c. coconut

Instructions

  1. Cut each Brazil nut into 3 or 4 pieces.
  2. In a mixing bowl, mix together the soft shortening, sugar, eggs, and vanilla.
  3. Sift together the flour, soda, and salt; add to the sugar mixture.
  4. Mix well until combined.
  5. Stir in the chopped nuts and coconut.
  6. Drop by teaspoons onto baking sheets.
  7. Bake about 12 to 15 minutes in a moderate (350°) oven.
