A hearty breakfast casserole combining tender potatoes, savory sausage links, hard-cooked eggs, and a creamy chive topping, perfect for weekend brunch or family mornings.

Ingredients

  • 2 lb. potatoes
  • 8 link sausages
  • 6 hard-cooked eggs
  • 1/2 pt. dairy sour cream
  • 1/2 c. milk
  • 1 Tbsp. flour
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 Tbsp. chives

Instructions

  1. Cook potatoes in boiling salted water until tender.
  2. Drain and cool slightly.
  3. Peel and slice the potatoes.
  4. Brown sausages in a skillet.
  5. Arrange two-thirds of potato slices in the bottom of a buttered baking dish.
  6. Layer eggs over the potatoes.
  7. Arrange sausage links in the center of the casserole.
  8. Place remaining potato slices around the edge of the casserole.
  9. Combine sour cream, milk, flour, salt, and pepper to make the sauce.
  10. Pour the sauce over the casserole.
  11. Sprinkle with chopped chives.
  12. Bake at 350°F (175°C) for 25 minutes.
