Ingredients

  • 1 cup chopped onion
  • 1/2 cup margarine
  • 1 (10 oz.) can cream of chicken soup
  • 7 oz. evaporated milk
  • 8 oz. Velveeta cheese, cubed
  • 2 (10 oz.) packages frozen chopped broccoli, thawed and drained
  • 1 cup uncooked instant rice

Instructions

  1. Saute onion and margarine in a large skillet until tender.
  2. Add cream of chicken soup, evaporated milk, and cubed Velveeta cheese; mix well.
  3. Bring the mixture to a boil.
  4. Stir in thawed and drained chopped broccoli and uncooked instant rice.
  5. Spoon into a deep round baking dish.
  6. Bake at 350°F for 50 minutes or until golden brown.
  7. Cool for 20 minutes before serving.
