- Preheat the oven to 350°F. Lightly grease a 12-cup muffin pan.
- Sift flour into a large bowl. Stir in peppers, pine nuts and parsley. Whisk milk, butter and egg in a medium bowl. Season to taste. Add to the flour mixture and stir until blended. Do not over-mix. Spoon into muffin pan, filling each cup 1/2 full. Top each with a cube of brie. Cover evenly with remaining batter.
- Bake for 20-25 mins, until a toothpick inserted into the center comes out clean. Cool on a wire rack.
