Ingredients

  • 1/2 cup lemon gelatin
  • 1 1/4 cups hot water
  • 1/2 cup chilled evaporated milk
  • 1 1/2 cups whipping cream
  • 2 (8 oz.) packages softened cream cheese
  • 1/2 cup cottage cheese
  • 1/2 cup lemon juice
  • 1/4 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • graham cracker crust

Instructions

  1. Dissolve lemon gelatin in hot water and set aside until syrupy.
  2. Combine chilled evaporated milk and whipping cream and beat until mixture is quite thick.
  3. In a separate bowl, mix together cream cheese, cottage cheese, lemon juice, vanilla, salt, and sugar.
  4. Add the cheese mixture to the cream mixture.
  5. Add the partially set gelatin.
  6. Mix thoroughly.
  7. Pour into the graham cracker crust and chill for 4 hours.
