Ingredients

  • 2 c. broccoli, cooked, drained and finely chopped
  • 1 c. boiled ham, diced
  • 1/4 c. Parmesan cheese, freshly grated
  • salt and pepper to taste
  • 2 c. flour
  • 1 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1/2 tsp. baking soda
  • 6 Tbsp. cold butter

Instructions

  1. In a bowl, combine the cooked, drained, and finely chopped broccoli, diced ham, Parmesan cheese, salt, and pepper.
  2. In another bowl, sift together the flour, baking powder, salt, and baking soda.
  3. Add cold butter, cut into bits, and blend until the mixture resembles cornmeal.
  4. Stir in buttermilk to form a dough into a ball.
  5. Roll the dough into a 16 x 6-inch rectangle on a floured sheet of wax paper.
  6. Brush the dough with 2 tablespoons melted butter and spread the broccoli mixture evenly over the dough, leaving a 1/2-inch border.
  7. Starting with a long side, roll up the dough tightly using the wax paper, ending seam side down.
  8. Cut the rolled dough crosswise into 1-inch slices.
  9. Place the slices with a cut side down in well-buttered muffin tins.
  10. Brush the tops lightly with melted butter.
  11. Bake in the upper third of a preheated 450°F (232°C) oven for 20 to 25 minutes until golden.
  12. Let the biscuits stand in the tins for 1 minute.
  13. Loosen the edges with a spatula and serve.
