Ingredients

  • 7.5 oz ready bake buttermilk biscuits
  • 2 cups chopped broccoli
  • 5 oz Cheddar cheese shredded
  • 1 large plum tomato diced
  • 1/4 cup minced scallion or onion
  • 1 tablespoon plus 2 teaspoons margarine melted

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Spray-grease muffin tins and press biscuits into each cup, stretching them out to cover the bottom and sides.
  3. In a bowl, mix cooked and well-drained chopped broccoli, shredded Cheddar cheese, diced plum tomato, minced scallion or onion, and melted margarine.
  4. Spoon equal amounts of the mixture into each biscuit-lined muffin cup.
  5. Place water in any muffin tins not being used to prevent burning.
  6. Bake in the preheated oven for 10 minutes or until golden and heated through.
  7. Serve hot or cold.
