Ingredients

  • 1 cup oats
  • 1 cup flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon cinnamon
  • 1 cup skim milk
  • 1/2 cup mashed ripe banana
  • 1/2 cup raisins or chopped dried apricots, dates, or prunes
  • 1/4 cup vegetable oil
  • 1/4 cup packed brown sugar
  • 1 egg white

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Line 12 medium muffin cups with paper baking cups.
  3. In a bowl, combine oats, flour, baking powder, and cinnamon.
  4. In a separate bowl, mix remaining ingredients: milk, mashed banana, dried fruits, vegetable oil, brown sugar, and egg white.
  5. Add the wet ingredients to the dry ingredients and stir just until moistened.
  6. Divide the batter evenly among the prepared muffin cups.
  7. Bake for about 20 minutes or until a toothpick inserted into the center comes out clean.
