Ingredients

  • 1/2 cup chopped onion
  • 1/2 cup margarine
  • 2 (10 oz.) packages frozen chopped broccoli, thawed
  • 1 1/2 cups cooked rice
  • 1 (10 3/4 oz.) can condensed cream of mushroom soup
  • 3/4 pound Velveeta pasteurized process cheese spread

Instructions

  1. Saute chopped onion in margarine until tender.
  2. Add thawed chopped broccoli, cooked rice, condensed cream of mushroom soup, and half of the Velveeta cheese cut into cubes. Stir until the cheese is melted.
  3. Pour the mixture into a 1 1/2-quart casserole.
  4. Bake at 350°F for 15 minutes.
  5. Top with remaining sliced Velveeta cheese and continue baking until the cheese begins to melt.
