Ingredients

  • 2 (6 oz.) packages stone ground yellow cornbread mix
  • 1/2 stick oleo, softened
  • 8 oz. Egg Beaters or 4 eggs
  • 1 small (12 oz.) package low-fat cottage cheese
  • 1 (10 oz.) package frozen broccoli, chopped and thawed
  • 1/4 tsp. onion flakes

Instructions

  1. Preheat oven to 400°F.
  2. Spray a 13 x 9 x 2-inch pan with cooking spray.
  3. Mix all ingredients in the order given until well blended.
  4. Pour the batter into the prepared pan.
  5. Bake for 30 to 35 minutes or until golden brown.
  6. Let cool slightly before serving.
  7. Refrigerate leftovers and reheat toasted slices as desired.
