Ingredients

  • 1 head cauliflower
  • 1 bunch broccoli
  • 2 cloves garlic, peeled
  • 1 lemon
  • 3 Tbsp. salt
  • 1 bay leaf
  • 1 pt. cherry tomatoes, stemmed and washed

Instructions

  1. Wash cauliflower and broccoli and break into similar sized flowerets.
  2. Cut the rind from lemon with a vegetable peeler, trying not to get any white on the peel.
  3. Add lemon peel, garlic, salt, and bay leaf to a large pot of boiling water.
  4. Boil for 5 minutes to flavor the water.
  5. Add vegetable flowerets; boil for 3 to 4 minutes, until broccoli is bright green and vegetables are crisp-tender.
  6. Do not overcook.
  7. Drain in a colander and rinse with cold water to stop cooking.
  8. Shake well to remove excess water.
  9. Discard seasonings.
  10. Refrigerate vegetables in a plastic bag.
