Ingredients

  • 6 oz. ham, diced
  • 2 cloves garlic
  • 2 Tbsp. olive oil
  • 1 1/2 cups chopped fresh tomato or canned tomatoes, seeded
  • 3 cups chopped fresh broccoli
  • salt
  • pepper
  • large pinch thyme leaves

Instructions

  1. Saute ham and garlic in olive oil for about 3 minutes.
  2. Add chopped tomatoes, tomato juice, chicken stock, thyme, salt, and pepper. Bring to a simmer.
  3. Add chopped broccoli and pasta. Cook until all ingredients are tender, about 20 minutes.
  4. Adjust seasoning to taste. Serve and sprinkle each serving with cheese.
