Broccoli Olive Linguine

Ingredients

  • 8 oz. uncooked regular linguine
  • 8 oz. uncooked spinach linguine
  • 2 Tbsp. olive oil
  • 1 clove garlic, minced
  • 3 c. broccoli florets
  • 1/2 tsp. red pepper flakes
  • 1 (13 3/4 oz.) can reduced-sodium chicken broth
  • 1/4 c. chopped, pitted, ripe olives

Instructions

  1. In a large saucepot of boiling, salted water, cook the linguine as per package instructions.
  2. While the linguine is cooking, heat olive oil in a large nonstick skillet over medium heat.
  3. Add minced garlic and sauté for 1 minute until softened.
  4. Add broccoli florets, red pepper flakes, and chicken broth to the skillet.
  5. Cover and cook for about 6 minutes or until the broccoli is tender.
  6. Drain the cooked linguine and place it in a large serving bowl.
  7. Add the broccoli mixture and chopped olives to the linguine.
  8. Toss well to combine, then sprinkle with grated Parmesan cheese before serving.
