Ingredients

  • 1 lb. broccoli florets
  • 1 1/2 c. fresh mushrooms, sliced
  • 2 carrots, cut in thin 1-inch strips
  • 1 red onion, cut in rings
  • 1 red pepper, cut in half rings
  • 2 cloves garlic, minced
  • 3 Tbsp. oil
  • pinch of salt
  • 1 tsp. grated lemon rind

Instructions

  1. Put oil in a pot, add garlic, onion, mushrooms, and red peppers. Stir-fry for 2 minutes.
  2. Add broccoli florets and stir-fry for 5 to 8 minutes, until tender.
  3. Add salt and grated lemon rind.
  4. Toss well and serve.
