Ingredients

  • 1 lb. lump crabmeat
  • 1 tsp. seafood seasoning or 1 tsp. dry mustard
  • 1 tsp. lemon juice
  • 1 Tbsp. finely chopped fresh parsley
  • 2 eggs

Instructions

  1. Pick over crabmeat gently and carefully to remove shells and cartilage; do not break up lump meat.
  2. Add seafood seasoning or dry mustard, lemon juice, parsley, and eggs; combine gently.
  3. Form the mixture into medium-sized cakes and place in a lightly buttered flat pan.
  4. Place under broiler and cook until golden brown, turning once.
  5. Serve with salted crackers.
