Broiled Tato-Skins

Crispy broiled potato skins topped with melty cheese, bacon, and green onions, perfect as a savory appetizer or snack for gatherings and casual get-togethers.

Ingredients

  • 4 large baked potatoes
  • 2 Tbsp margarine
  • 1/2 tsp salt
  • 1 cup finely shredded Monterey cheese with jalapeno pepper
  • 4 slices bacon, cooked and crumbled
  • sour cream
  • chopped green onion tops

Instructions

  1. Cut each baked potato in half lengthwise.
  2. Scoop out the insides of each potato half.
  3. Spread the inside of each shell with melted margarine and sprinkle with salt.
  4. Fill each potato shell with shredded Monterey cheese and crumbled bacon.
  5. Broil in the oven until the cheese melts and is bubbly.
  6. Serve topped with sour cream and chopped green onion tops.
