Ingredients

  • 3 oz. strawberry Jell-O
  • 3 oz. orange Jell-O
  • 3 oz. lime Jell-O
  • 1 pkg. Knox gelatine
  • 1 cup pineapple juice
  • 3 Tbsp. sugar
  • 24 graham crackers
  • 1/2 cup brown sugar
  • 1/2 cup soft butter
  • 1 pint whipping cream
  • 1/2 cup sugar

Instructions

  1. Dissolve each package of Jell-O in 1 1/2 cups boiling water. Pour into shallow pans to set.
  2. Take 1 package of Knox gelatine and dissolve in 1/4 cup cold water.
  3. Bring 1 cup of pineapple juice to a boil.
  4. Add 3 tablespoons of sugar and the plain gelatine. Mix and set aside to cool thoroughly.
  5. Crush 24 graham crackers and mix with 1/2 cup brown sugar and 1/2 cup soft butter.
  6. Press half of the cracker mixture into the bottom of an 8 1/2 x 11-inch pan.
  7. Whip 1 pint of whipping cream.
  8. Add 1/2 cup of sugar and 1 teaspoon of vanilla to the whipped cream. Fold in the cooled pineapple gelatine mixture.
  9. Cut the set strawberry, orange, and lime Jell-O into squares and fold into the whipped cream mixture.
  10. Sprinkle the remaining graham cracker mixture on top.
  11. Chill the dessert overnight before serving.
