Brunch Quiche Muffins
Delicious brunch quiche muffins combine flaky pie crust with savory spinach, sun-dried tomatoes, and Swiss cheese, perfect for breakfast, brunch, or entertaining guests.

Instructions
- Preheat oven to 350°F.
- Use a cookie cutter or drinking glass to cut circular shapes from the pie crust.
- Line the bottom and halfway up the sides of a muffin pan with the pie dough circles.
- Sprinkle the crust with onion powder, garlic powder, salt, and pepper.
- Bake the crust for 10 minutes.
- In a bowl, combine Egg Beaters, thawed and chopped spinach, chopped sun-dried tomatoes, red pepper flakes, salt, and pepper.
- Fill each muffin cup with the egg mixture.
- Bake for 29 minutes.
- Remove from oven, sprinkle Swiss cheese on top of each muffin.
- Bake for an additional 10 minutes or until the cheese is melted and bubbly.
