Brunch Quiche Muffins

Delicious brunch quiche muffins combine flaky pie crust with savory spinach, sun-dried tomatoes, and Swiss cheese, perfect for breakfast, brunch, or entertaining guests.

Ingredients

  • 1 pkg. Pillsbury pie crusts
  • 1 pt. Egg Beaters
  • 1 pkg. frozen spinach, thawed, drained and chopped
  • 8 oz. Swiss cheese, shredded
  • 6 to 8 sun-dried tomatoes, steeped in hot water, drained and chopped
  • 1/4 tsp. red pepper flakes
  • onion powder
  • garlic powder

Instructions

  1. Preheat oven to 350°F.
  2. Use a cookie cutter or drinking glass to cut circular shapes from the pie crust.
  3. Line the bottom and halfway up the sides of a muffin pan with the pie dough circles.
  4. Sprinkle the crust with onion powder, garlic powder, salt, and pepper.
  5. Bake the crust for 10 minutes.
  6. In a bowl, combine Egg Beaters, thawed and chopped spinach, chopped sun-dried tomatoes, red pepper flakes, salt, and pepper.
  7. Fill each muffin cup with the egg mixture.
  8. Bake for 29 minutes.
  9. Remove from oven, sprinkle Swiss cheese on top of each muffin.
  10. Bake for an additional 10 minutes or until the cheese is melted and bubbly.
