Ingredients

  • 1 1/4 lb. ground beef
  • 1 1/2 tbsp. chili powder
  • 1/2 tsp. cumin
  • 1/2 tsp. salt
  • 1/4 tsp. Pepper
  • 10 oz. spinach
  • 1 1/4 c. chunky salsa
  • 1 c. Cheddar cheese
  • 8 flour tortillas

Instructions

  1. Brown ground beef in nonstick skillet over medium heat for 10 minutes, or until cooked through.
  2. Pour off drippings; add chili powder, ground cumin, salt and pepper.
  3. Stir in spinach and chunky salsa; heat through.
  4. Remove from heat; stir in shredded Cheddar cheese.
  5. Assemble 8 flour tortillas (2 on each plate).
  6. Spoon beef mixture down the center of each tortilla and fold to create a pocket.
