Ingredients

  • 4 large baking potatoes
  • 8 oz. cream cheese
  • 1 medium onion
  • 3 eggs
  • 2 Tbsp. butter
  • 3 Tbsp. flour
  • 1 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. Bake the potatoes at 400°F for 40 to 50 minutes until tender.
  2. Halve the potatoes and scoop out the insides into a large bowl.
  3. Rice or grate the potatoes into the bowl.
  4. Add the diced cream cheese and beat until smooth.
  5. Add the chopped onion, eggs, butter, flour, salt, and pepper, then beat until the mixture is smooth.
  6. Spoon the filling back into the potato skins.
  7. Reheat in the oven for about 20 minutes or until the tops are slightly browned.
  8. The filled potatoes can be frozen after filling.
