Ingredients

  • 1 cup salad dressing or mayo
  • 3 tablespoons milk
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon ground red pepper
  • 1/4 teaspoon garlic powder
  • 2 chicken breasts (1 lb.), skinned, boned and cut into 1-inch chunks
  • 3/4 cup crushed sesame crackers
  • 1/2 cup salsa

Instructions

  1. Preheat oven to 425°F.
  2. Mix together 1/2 cup mayo, milk, ground cumin, onion powder, ground red pepper, and garlic powder.
  3. Lightly dip chicken chunks into the mayo mixture.
  4. Coat the chicken well with crushed sesame crackers.
  5. Place the coated chicken pieces on a greased cookie sheet.
  6. Bake for 18 to 20 minutes until golden and cooked through.
  7. Mix the remaining mayo with salsa.
  8. Serve the chicken nuggets with the salsa and mayo mixture on toothpicks.
