Ingredients

  • 8 medium Irish potatoes, chopped
  • 1 small onion, chopped
  • 1 to 2 lb Hillshire Farm smoked sausage
  • enough oil to cover bottom of pan
  • 1/2 to 1 cup water

Instructions

  1. In a medium skillet with oil, cut the sausage into thin round pieces and fry until done. Remove and drain.
  2. Add chopped potatoes and onions to the skillet.
  3. Cook on medium-high heat with enough water to create steam. Keep adding water as needed.
  4. Cover and cook until the water evaporates and the potatoes and onions are tender.
  5. Add the cooked sausage back into the skillet.
  6. Simmer everything together for an additional 15 minutes.
  7. Serve and enjoy!
