Ingredients

  • 2 (20 oz.) cans crushed pineapple
  • 2 (3 oz.) packages lime flavored gelatin
  • 2 1/2 cups miniature marshmallows
  • 1 small container Cool Whip

Instructions

  1. In a pan, bring the crushed pineapple and its juice to a boil.
  2. Add lime-flavored gelatin and stir until dissolved.
  3. Allow the mixture to cool slightly, then stir in the miniature marshmallows.
  4. Refrigerate for 1 hour or until the gelatin is set.
  5. Fold in crushed mints into the gelatin mixture.
  6. Spread the mixture into a 13 x 9 x 2-inch dish.
  7. Refrigerate until fully chilled.
  8. Top with whipped cream before serving.
