Harvest Muffins
Harvest Muffins combine hearty oats, sweet raisins, and warming spices, offering a wholesome, flavorful snack perfect for breakfast or a quick treat suitable for all ages.
Ingredients
- 1 1/4 cups rolled oats ⓘ
- 2 teaspoons vanilla ⓘ
- 1/2 cup unsweetened applesauce ⓘ
- 1 jar carrot baby food ⓘ
- 1 3/4 cups oat flour ⓘ
- 3/4 teaspoon baking soda ⓘ
- 3/4 teaspoon cream of tartar ⓘ
- 1 1/2 teaspoons cinnamon ⓘ
- 1/8 teaspoon ground nutmeg ⓘ
- 1/2 cup raisins ⓘ
- 3 egg whites ⓘ
- 1/3 cup honey ⓘ
- 1/2 cup water ⓘ
Instructions
- Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.
- Process 2 1/3 cups of rolled oats in a blender for 2 to 3 minutes until finely ground.
- In a large mixing bowl, combine the processed oats, oat flour, baking soda, cream of tartar, cinnamon, and nutmeg.
- Add the unsweetened applesauce, carrot baby food, honey, vanilla, water, and beaten egg whites to the dry ingredients. Mix until well combined.
- Fold in the raisins.
- Divide the batter evenly among the muffin cups.
- Bake for 20 minutes or until a toothpick inserted into the center comes out clean.
- Allow muffins to cool slightly before serving.
