Ingredients

  • 8 oz. Dijon mustard
  • 8 oz. soy sauce
  • 8 oz. peanut oil
  • garlic
  • boned and butterflied leg of lamb

Instructions

  1. Marinate the boned and butterflied leg of lamb in Dijon mustard, soy sauce, minced garlic, and peanut oil overnight or up to 48 hours.
  2. Preheat the grill to hot coals.
  3. Remove the lamb from the marinade and barbecue over hot coals for 45 minutes, turning occasionally for even cooking.
  4. Serve the grilled butterfly lamb with rice.
