Ingredients

  • 1 3/4 cups sifted cake flour
  • 1 1/4 cups sugar
  • 1/2 cup shortening
  • 1 teaspoon vanilla or almond flavoring
  • 1 teaspoon soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 2 eggs

Instructions

  1. Sift the dry ingredients including cake flour, sugar, soda, and salt.
  2. Add shortening, 2/3 cup of buttermilk, and flavoring (vanilla or almond).
  3. Beat the mixture for about 30 seconds on low speed, then for 2 minutes on medium speed.
  4. Add the remaining buttermilk and eggs to the batter.
  5. Beat the mixture for an additional 2 minutes.
  6. Pour the batter into prepared cake pans and bake at 375°F for about 25 minutes.
