Butterscotch Tapioca

Ingredients

  • 6 c. boiling water
  • 1 1/2 c. Minute pearl tapioca
  • 1 tsp. salt
  • 2 c. brown sugar
  • 2 beaten eggs
  • 1 c. milk
  • 1 c. sugar
  • 2 tsp. vanilla
  • 1 stick butter
  • whipped cream
  • bananas
  • butterscotch chips

Instructions

  1. Cook the first 3 ingredients until about done (6 minutes). Add the brown sugar; cook until done.
  2. Mix together and add the beaten eggs, milk and sugar.
  3. Cook until it bubbles.
  4. Add the vanilla.
  5. Brown 1 stick butter and add.
  6. When cold, add whipped cream, bananas and butterscotch chips.
