- Grease 9 x 5 x 3-inch loaf pan.
- Dissolve yeast in warm water in large mixing bowl.
- Add buttermilk, 2 1/2 cups flour, shortening, sugar, baking powder and salt.
- Blend 30 seconds on low speed.
- Beat 2 minutes on medium speed, stirring in remaining flour.
- Knead 5 minutes or about 200 strokes on generously floured board.
- Roll dough to 18 x 9-inch rectangle.
- With side of hand, press each end to seal.
- Fold ends under loaf.
- Place seam side down in pan.
- Brush lightly with butter.
- Let rise in warm place (85°) for 1 hour.
- (Dough in center should come about 2-inches above pan.)
- Preheat oven to 325° and place oven rack in lowest position.
- Bake 30 to 35 minutes.
- Remove from pan and brush with butter.
