Ingredients

  • 1 medium head cabbage
  • 46 oz. canned tomato juice
  • 46 oz. water
  • 3 bouillon cubes
  • 1 fresh lemon (juice of)
  • salt and pepper to taste
  • fresh basil

Instructions

  1. Wash, drain, and shred the cabbage.
  2. Place the tomato juice in a large nonaluminum saucepan with an equal amount of water.
  3. Add the shredded cabbage to the saucepan.
  4. Bring the mixture slowly to a boil.
  5. Cover and simmer for 10 minutes.
  6. Add the bouillon cubes, lemon juice, salt, pepper, and any other desired spices and vegetables.
  7. Cover and cook slowly for an additional 5 to 15 minutes, depending on the preferred doneness of the vegetables.
  8. Serve hot and reheat slowly for best results.
