Malfoof, or cabbage rolls, feature tender cabbage leaves filled with seasoned rice and meat, baked to perfection with a rich tomato and lemon-flavored sauce, perfect for comforting meals.

Ingredients

  • 1 medium cabbage
  • 1 cup rice, washed and drained
  • 1 cup ground beef or lamb
  • 3 tablespoons butter
  • 1 clove garlic, crushed
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon cinnamon
  • 2 tablespoons lemon juice
  • 1 can (5 1/2 oz.) tomato paste
  • water

Instructions

  1. Core and parboil the cabbage until limp.
  2. Cut the cabbage leaves in half and remove the ribs.
  3. Preheat the oven to 400°F (200°C).
  4. Combine all ingredients except cabbage leaves, tomato paste, and water in a mixing bowl.
  5. Place a heaping tablespoon of the filling in the center of a cabbage leaf lengthwise.
  6. Fold the outside edges 1/2 inch towards the center and roll up.
  7. Arrange the filled cabbage rolls in a casserole dish or small roaster.
  8. Top with tomato paste and add water as needed.
  9. Bake in the preheated oven until cooked through and flavorful.
