Ingredients

  • 1 medium head cabbage
  • 3 hard-boiled eggs
  • 2/3 cup cheese (Colby or Velveeta)
  • 1 stick margarine
  • 3 tablespoons flour
  • 1 1/2 cups milk
  • 1/2 teaspoon salt
  • 1 large bag potato chips

Instructions

  1. Boil shredded cabbage for 7 minutes, then drain.
  2. Make white sauce by melting margarine, stirring in flour, then gradually adding milk and salt, cooking until thickened.
  3. Line a buttered 13 x 9-inch baking dish with finely crushed potato chips.
  4. Layer half of the cooked cabbage over the chips.
  5. Pour half of the white sauce over the cabbage layer.
  6. Add sliced hard-boiled eggs on top of the sauce.
  7. Sprinkle 1/3 cup grated cheese over the eggs.
  8. Repeat the layers with remaining cabbage, sauce, eggs, and cheese.
  9. Top with remaining crushed potato chips.
  10. Bake at 325°F for 40 minutes until golden and bubbly.
