Ingredients

  • 2 lb. ground beef
  • 1 egg, beaten
  • 1/2 c. milk
  • 1/2 c. uncooked rice
  • 1/2 c. chopped green pepper
  • 1 (1 1/2 to 1 5/8 oz.) pkg. taco or enchilada sauce mix
  • 2 tsp. salt
  • 3 Tbsp. cooking fat
  • 1 (16 oz.) can tomatoes
  • 1 (13 1/2 oz.) can tomato juice
  • flour for sauce, if desired

Instructions

  1. Combine ground beef, beaten egg, milk, uncooked rice, chopped green pepper, taco or enchilada sauce mix, and salt in a mixing bowl.
  2. Shape the meat mixture into 8 cones.
  3. Brown the cones on all sides in cooking fat in a skillet.
  4. Combine tomatoes, tomato juice, and remaining enchilada sauce mix in a deep pan.
  5. Bring the sauce mixture to a boil.
  6. Place the cones (pointing up) in the sauce in the pan.
  7. Cover and cook slowly for 1 1/2 hours.
  8. Remove the cones to a warm serving dish.
  9. Thicken the sauce with flour if desired and spoon over the cones before serving.
