Caesar Salad Bites With Figs
Ingredients
- 8 thin slices sourdough bread ⓘ
- 1 oz Parmesan cheese, freshly grated + extra, to serve ⓘ
- 1/4 cup mayonnaise ⓘ
- 1 tbsp lemon juice ⓘ
- 1 tbsp sour cream ⓘ
- 2 tsp capers, chopped
- 1 None anchovy, chopped ⓘ
- 1 clove garlic, minced ⓘ
- 1 drop hot pepper sauce ⓘ
- 2 heads baby romaine lettuce, 4 outer leaves shredded, remainder separated ⓘ
- 12 thin slices smoked chicken, chopped ⓘ
- 6 None figs, quartered ⓘ
Instructions
- Preheat oven to 350°F. Line a baking tray with foil. Arrange bread on tray and sprinkle with Parmesan. Bake for 4-5 mins, or until golden. Let cool then break into bite-size pieces.
- Meanwhile, to make the dressing, combine mayonnaise, lemon juice, sour cream, capers, anchovy, garlic and hot sauce.
- Combine shredded lettuce with chicken, figs, dressing and sourdough crisps. Arrange on remaining lettuce leaves. Top with extra cheese, to serve.
