Ingredients

  • 1 lb. fully cooked, smoked sausage, cut into 1/4-inch slices
  • 1/4 cup chopped onion
  • 1 cup frozen corn
  • 1 (15 1/2 oz.) can hot chili beans
  • 1 cup V-8 juice
  • 1 tablespoon paprika
  • 2 to 3 teaspoons ground cumin
  • 1/4 teaspoon cayenne pepper
  • 1 cup uncooked instant rice

Instructions

  1. In a large skillet, sauté sausage and onion until sausage is lightly browned.
  2. Add corn; cook and stir for 1 minute.
  3. Stir in the beans, V-8 juice, paprika, cumin, and cayenne pepper, if desired.
  4. Bring to a boil.
  5. Reduce heat; simmer, uncovered, for 3 minutes.
  6. Stir in the rice.
  7. Remove from the heat; cover and let stand for 5 minutes.
  8. Sprinkle with cheese before serving.
