Ingredients

  • 4 to 5 lb venison roast
  • 3/4 cup flour
  • oil
  • 1 can Ro-Tel tomatoes
  • 1 large onion, chopped
  • 3 cloves garlic
  • salt

Instructions

  1. Season the venison roast with salt and red and black pepper.
  2. Dredge the meat completely with flour.
  3. Brown the meat in hot oil in a skillet.
  4. Remove the browned meat and place it on a baking pan lined with heavy-duty aluminum foil.
  5. Add the can of Ro-Tel tomatoes, chopped onion, and minced garlic around and on top of the meat.
  6. Seal the foil tightly to enclose the meat and ingredients.
  7. Bake at 350°F (175°C) for 1½ hours.
  8. Remove the meat from the oven and pan, then let the gravy thicken.
  9. Serve the sliced venison over rice with the gravy.
