- Season the venison roast with salt and red and black pepper.
- Dredge the meat completely with flour.
- Brown the meat in hot oil in a skillet.
- Remove the browned meat and place it on a baking pan lined with heavy-duty aluminum foil.
- Add the can of Ro-Tel tomatoes, chopped onion, and minced garlic around and on top of the meat.
- Seal the foil tightly to enclose the meat and ingredients.
- Bake at 350°F (175°C) for 1½ hours.
- Remove the meat from the oven and pan, then let the gravy thicken.
