Ingredients

  • 1 box yellow cake mix
  • 2 (1 lb.) cans drained crushed pineapple
  • 3 small boxes instant coconut pudding
  • 8 oz. softened cream cheese
  • 4 1/2 cups milk
  • 2 small cans shredded coconut

Instructions

  1. Prepare the yellow cake mix according to the package directions.
  2. Bake the cake in a cookie sheet for 15 minutes and allow it to cool.
  3. Spread the drained crushed pineapple evenly over the cooled cake.
  4. In a bowl, mix together the instant coconut pudding, softened cream cheese, and milk until smooth.
  5. Pour the pudding mixture over the pineapple layer.
  6. Spread the topping evenly over the pudding layer and sprinkle with shredded coconut.
  7. Refrigerate the cake until ready to serve.
