Ingredients

  • 3/4 lb. hot mashed potatoes
  • 4 to 6 oz. drippings, lard or suet or mixture
  • 2 oz. sugar
  • 3 oz. sultanas or other dried fruit
  • pinch of salt
  • flour
  • nutmeg

Instructions

  1. Take 1 pound each of diced potatoes, cauliflower, swedes, carrots, three or four spring onions, one teaspoonful of vegetable extract, and one tablespoonful of oatmeal.
  2. Cook all together for 10 minutes, with just enough water to cover, stirring occasionally to prevent sticking.
  3. Allow the mixture to cool.
  4. Put into a pie dish and sprinkle with chopped parsley.
  5. Cover with a crust of potatoes or wholemeal pastry.
  6. Bake in a moderate oven until the pastry is nicely brown.
  7. Serve hot with a brown gravy.
