Ingredients

  • 4 to 5 sliced zucchini
  • 2 small diced tomatoes
  • 1/2 cup chopped cilantro
  • 1 cup shredded cheese
  • 2 sliced yellow chilies (optional)
  • 2 cups water
  • 1 small chopped onion
  • 1 diced garlic clove
  • 1 tablespoon oil
  • 1 (8 oz.) can tomato sauce

Instructions

  1. Saute garlic and onions in oil; add zucchini and cook for about 10 minutes.
  2. Add diced tomatoes, sliced chilies (if using), and tomato sauce.
  3. Add water and bring to a boil.
  4. Lower heat and stir in cilantro and shredded cheese.
  5. Simmer for about 15 minutes until cheese is melted and zucchini is tender.
