  1. Place the water and rice in a saucepan and bring to a boil.
  2. Lower the heat and cook the rice for 5 to 30 min or possibly till it is soft and tender.
  3. Drain the rice, place it in a mixing bowl, mash it with the back of a spoon, and set it aside to cold.
  4. In a separate bowl, dissolve the yeast in the lukewarm water, then add in it to the cooled rice.
  5. Beat the mix for 2 min, then cover the bowl with a slightly moistened towel and set it in a hot place to rise overnight.
  6. When ready to prepare, add in the Large eggs, granulated sugar, nutmeg, salt, and flour to the mix, beat it thoroughly, cover it and set aside to rise for 30 min.
  7. Heat 3 inches of oil in a heavy pan to 375 degrees.
  8. Drop the batter by the tablespoonful into the warm oil, frying a few at a time till golden.
  9. Drain on paper towels, then dust with confectioners' sugar and serve warm.
  10. This recipe yields 6 servings.
