Ingredients

  • 1 lb. dried pinto beans
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 2 bay leaves
  • 2 chicken bouillon cubes
  • 16 oz. can tomatoes
  • 4 oz. ham chunks
  • 1 green bell pepper, chopped
  • 2 tsp. chili powder
  • 1/2 tsp. dry mustard
  • 1/4 tsp. oregano
  • 1 1/2 tsp. brown sugar

Instructions

  1. Soak the dried pinto beans in water to cover in a soup pot overnight.
  2. Drain and rinse the soaked beans.
  3. Add water to cover the beans, then add chopped onion, chopped garlic, bay leaves, and chicken bouillon cubes.
  4. Simmer over low heat for 1 1/2 hours, stirring occasionally.
  5. Add canned tomatoes, chopped green bell pepper, chili powder, dry mustard, oregano, ham chunks, and brown sugar.
  6. Remove bay leaves before serving.
