Canadian Flapjacks are hearty, apple-infused pancakes with a touch of honey, perfect for a cozy breakfast or brunch that appeals to all ages and tastes.

Ingredients

  • 2 c. flour
  • 1 pinch sea salt
  • 2 Tbsp. oil
  • 2 tsp. baking powder
  • 1 Pippin apple, grated
  • 2 eggs
  • 1/2 c. apple juice or milk
  • 1/2 c. honey

Instructions

  1. Combine all ingredients except the apple with a mixer.
  2. Add the grated apple and mix by hand until well incorporated.
  3. Spoon the batter into an oiled frying pan over medium heat.
  4. Cook until bubbles appear on the surface and the edges are set, then turn to cook the other side until browned.
  5. Serve immediately with your choice of topping.
