Ingredients

  • 1 (8 oz.) can crushed pineapple with juice
  • 1 egg
  • 2 Tbsp. flour
  • 2 Tbsp. apple cider vinegar
  • 1/2 cup sugar
  • 4 to 6 Granny Smith apples, peeled and diced
  • 1 cup plain peanuts

Instructions

  1. Over medium heat, stir crushed pineapple with juice, egg, flour, apple cider vinegar, and sugar until thick.
  2. Refrigerate until cool.
  3. Peel and dice the Granny Smith apples.
  4. Mix the diced apples with the cooled pineapple mixture, 1/2 cup peanuts, and Cool Whip.
  5. Spread the mixture evenly in a 9 x 9-inch pan.
  6. Sprinkle 1/2 cup peanuts on top as garnish.
  7. Refrigerate and serve on lettuce leaves.
