Ingredients

  • 1 1/2 cups granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 cup water
  • 2 tablespoons butter or margarine
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup candy corn

Instructions

  1. Butter the sides of a 3-quart heavy saucepan or Dutch oven. Combine sugar, corn syrup, and water in the pan.
  2. Stirring constantly, cook over medium-low heat until the sugar dissolves.
  3. Using a pastry brush dipped in hot water, wash down any sugar crystals on the sides of the pan, making sure the thermometer does not touch the bottom of the pan.
  4. Increase heat to medium and bring to a boil.
  5. Do not stir while the syrup is boiling.
  6. Continue to cook until the syrup reaches the hard crack stage (approximately 300° to 310°) and turns light golden in color.
  7. Test about 1/2 teaspoon of syrup in ice water.
  8. The syrup should form brittle threads in ice water and remain brittle when removed from the water.
