Ingredients

  • 1 (9-inch) pie crust, baked
  • 1 cup sugar
  • 1 cup sweet milk
  • 2 large eggs
  • 1 tablespoon plain flour
  • 1 teaspoon vanilla
  • 1/3 stick butter (about 2 tablespoons)

Instructions

  1. Separate the egg yolks and set the whites aside.
  2. In a saucepan, beat the egg yolks; add sweet milk, 1/2 cup sugar, and 1 tablespoon flour.
  3. Stir the mixture until all ingredients are blended.
  4. Place the saucepan on low heat, preferably using a double boiler, and cook until the mixture thickens.
  5. Pour the caramel filling into the baked pie crust.
  6. In a separate bowl, beat the egg whites until soft peaks form.
  7. Gradually add 1 cup sugar and continue beating until stiff peaks form.
  8. Spread or pipe the meringue over the caramel filling, sealing the edges.
  9. Bake the pie in a preheated oven at 350°F (175°C) for about 10 minutes or until the meringue is golden.
  10. Allow to cool before serving.
