Ingredients

  • 2 cups sugar
  • 1 1/4 cups light corn syrup
  • 1 1/2 cups half and half
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt

Instructions

  1. Combine 3/4 cup sugar, 2/3 cup corn syrup, and 1/4 cup water in a 1 1/2-quart pan.
  2. Stir over medium heat until sugar dissolves; then boil to 238° on a candy thermometer.
  3. Pour the hot syrup over beaten egg whites, beating constantly until slightly cooled, about 5 minutes.
  4. Spoon the mixture into a well-buttered bowl and make a well in the center; let stand.
  5. In a separate saucepan, heat 2 cups sugar, 1 1/4 cups corn syrup, 1 1/2 cups half and half, 1 teaspoon vanilla, and 1/4 teaspoon salt to create the caramel.
  6. Cook the caramel mixture until it reaches the desired consistency, then pour over the nougat layer.
  7. Allow to set completely before cutting into logs and serving.
