Ingredients

  • 10 oz. frozen spinach, cooked and drained
  • 4 boned, skinless chicken breast halves (about 1 lb.)
  • 3/4 c. skim milk
  • 2 tsp. cornstarch
  • 1 1/2 tsp. instant chicken bouillon granules
  • 1/4 tsp. caraway seed
  • 1/8 tsp. pepper
  • 2 oz. processed Swiss cheese

Instructions

  1. Divide cooked and drained spinach into four microwave-proof or oven-safe baking dishes.
  2. In a large skillet sprayed with nonstick coating, cook chicken breasts over medium heat for 8 to 10 minutes or until tender and no longer pink, turning occasionally.
  3. Place cooked chicken on top of the spinach in each dish.
  4. Prepare the sauce by combining skim milk, cornstarch, chicken bouillon granules, caraway seed, and pepper; heat until thickened.
  5. Pour the sauce over the chicken and spinach in each dish.
  6. Tear processed Swiss cheese into pieces and sprinkle on top of the sauce.
  7. Cover with foil, seal, and freeze if not serving immediately.
