Ingredients

  • 2 1/2 cups cake flour
  • 1 cup self-rising flour
  • 2 cups sugar
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1 1/4 cups Wesson oil
  • 1 1/4 cups buttermilk
  • 5 eggs
  • 1 Tbsp vanilla

Instructions

  1. Sift each type of flour separately three times.
  2. Measure the required amounts of each flour and sift together with baking powder and baking soda.
  3. Separate the eggs.
  4. Beat the egg whites until stiff and set aside.
  5. Beat the egg yolks with sugar, then add oil, vanilla, and buttermilk.
  6. Gradually add the flour mixture in small amounts, blending well after each addition.
  7. Gently fold in the beaten egg whites.
  8. Pour the batter into four greased and floured 9-inch cake pans.
  9. Bake at 350°F (175°C) for about 35 minutes, or until the cake springs back when touched.
