Ingredients

  • 3 c. diced cooked chicken
  • 1 c. diced celery
  • 2 Tbsp. lemon juice
  • 1 Tbsp. minced onion
  • 1 tsp. salt
  • 1/3 c. mayonnaise
  • 1 c. seedless green grapes, quartered
  • 1 (11 oz.) can mandarin oranges, drained
  • 1/2 c. slivered almonds, toasted
  • leaf lettuce

Instructions

  1. Combine diced cooked chicken, diced celery, lemon juice, minced onion, and salt in a large bowl.
  2. Chill the mixture well before serving.
  3. Add mayonnaise, quartered grapes, drained mandarin oranges, and toasted slivered almonds to the chicken mixture.
  4. Toss everything together until well coated.
  5. Serve on leaf lettuce leaves.
